DIY Dinner Party on a Dime {Keep it Casual}

I love having dinner parties, both low-key and fancy — but, dietary restrictions and preferences often leave me scratching my head about what to make.

My favorite solution often includes something that can be customizable by each attendee, and given my current pregnancy cravings for Mexican food (okay, can’t blame it on the baby… I’m always craving Mexican food), I went with burrito bowls!

I recently did this for a group of college girls that I mentor — we had a little “goodbye” party before they headed their separate ways for the summer {p.s., I miss you guys!}.

This is the easiest meal to make for a crowd, and will please almost any palate.  Even if you’re not a “good cook,” I promise that you will be able to make this without breaking a sweat. Here’s how to make it happen:

6 Hours Before: Prep the Chicken!

  • Frozen chicken breasts (estimate about 1/4 lb. per person)
  • 1 jar of your favorite salsa
  • 2 Tbsp taco seasoning (per lb. of chicken)

Place all ingredients in a slow cooker, set to “low” for 6 hours.  Shred with a fork when done.

Set Out the Ingredients

  • Shredded lettuce
  • Black Beans/Pinto Beans/Refried Beans
  • Brown Rice/White Rice/Cauliflower Rice
  • Sautéed peppers and onions
  • Sour cream (or plain Greek yogurt for a healthier option)
  • Shredded cheese
  • Avocado/Guacamole
  • Olives
  • Tortilla Chips
  • Jalapeños
  • Salsa
  • Tapatio/Tabasco/Hot Sauce of choice
