Baby Friendly (and healthy!) Muffin Recipe

It has been so fun watching Reese learn to eat.  She makes the most hilarious faces during mealtimes, especially when she is trying something new.  I recently was looking for a baby friendly and healthy recipe to make with some bananas that I had that were turning brown {I’m one of those weird people who likes my bananas green, as soon as they start to get brown spots I just can’t do it}.

I came across this Apple Banana Muffin recipe on Weelicious and thought I’d try them out (because they sounded pretty yummy to me too!).  The recipe is also super easy (always a plus with a baby) and has no added sugar.

  • 1 1/2 cups all purpose flour
  • 1/2 cup old fashioned oats
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon {I added a little more as I love cinnamon}
  • 3 tablespoons vegetable or canola oil
  • 1/2 cup agave or honey
  • 1 egg
  • 1/2 cup milk
  • 2 bananas, mashed
  • 1 medium apple, peeled and grated (gala, pink lady, fuji or golden delicious are good choices) {I used pink lady apples}

local muffin ingredients

  • Preheat oven to 350 degrees.
  • Combine the first 6 ingredients in a bowl and mix.
  • In a separate bowl, whisk the remaining ingredients together.
  • Slowly add the flour mixture into the wet ingredients and stir until just combined.
  • Grease a mini muffin tin or line it with muffin cups and fill each cup 3/4 full with the batter. {Just an FYI these muffins do tend to stick to paper baking cups so you can spray those as well–I like to use coconut oil– or use the foil cups}
  • Bake for 20 minutes or until a toothpick comes out clean.
  • Serve.

Reese definitely enjoyed the muffins and you can see her intense concentration as she tries to pibk up her bite and put it in her mouth (which only makes it there about half of the time haha)!
